During a recent drive through Idaho Falls, I discovered Pachanga's. Finding a parking spot took a little circling of the block, but it was worth the effort, especially given how bustling the place was on what I recall being a Friday night. Despite the crowd, I was promptly welcomed and shown to a table, as I was dining solo. A bowl of fresh, delicious chips and salsa arrived quickly, and I was pleased to find Dos Equis Amber on tap, served in a generous 22-ounce, perfectly chilled mug. Having driven all day, I settled on the Carne Asada, which, along with a couple of beers, was thoroughly enjoyable. I was particularly impressed by the attentiveness of my server, who I suspected might be one of the owners, especially considering I was occupying a table for four by myself. We even shared a laugh when I suggested she take a moment to relax with a margarita or a cold beer, to which she humorously replied that her team relied on her to keep things running smoothly. I would certainly make a point to stop here again should my travels bring me back to the area.

I found the flautas to be exquisite, both in their visual appeal and their delightful flavor profile, and the Taco Salad was undeniably first-rate. As someone who dines extensively across the country, I can honestly say this ranks among the best food I've ever had. It's already marked as an essential stop for my next journey back to Idaho Falls. I had ordered the Chile Colorado, Carne Asada, and a shredded beef quesadilla for my child. Regrettably, the Chile Colorado was entirely devoid of any distinct flavor, which was quite disappointing. Furthermore, my kid's shredded beef quesadilla arrived noticeably greasy. Given the prices, I certainly anticipated a higher standard for the food quality. While the service was commendable and the overall ambiance, especially the art, was fantastic, the dishes themselves didn't quite hit the mark.

I've found this to be the only truly decent Mexican food option in Idaho Falls, and they genuinely have the best salsa in town. The service here is consistently great, earning a perfect 5/5, which perfectly complements the fantastic 5/5 atmosphere. While the food itself is a solid 4/5, the overall experience truly stands out.
